When the tree gives you lemons, squeeze, baby, squeeze!

We had a bumper crop of lemons this year (after losing them all 2 years ago to a freeze and then only having a small crop last year.) It took 2 years for the tree to recover, but once it recovered - man oh man! A few Saturdays ago, Gracie got to work with dad juicing the rest of the lemons. Thankfully, our Kitchenaid juicer attachment makes for pretty quick work (if only it would clean up the sticky mess :-). Gracie really is our helper extraordinaire - she loves to work in the kitchen and volunteers for almost any job. She also adapts quite well with her arm (see video below.) We like to freeze the juice in gallon and quart-sized bags for the summer months and make homemade lemonade, frozen lemonade popsicles, lemon slush, lemon tea, etc. etc. This year Gracie and I may also make some homemade lemon bars, lemon curd or a lemon meringue pie! Yum!
